A light, flavorful dish with tender fish fillets cooked to perfection in a tangy lemon butter sauce, making it a quick and delicious weeknight dinner.
Ingredients
• 4 fish fillets (such as cod, tilapia, or halibut)
• Salt and black pepper to taste
• 1/4 cup all-purpose flour
• 2 tablespoons olive oil
• 2 tablespoons unsalted butter
• 3 cloves garlic, minced
• 1/4 cup chicken broth
• 3 tablespoons lemon juice
• 1 teaspoon lemon zest
• 2 tablespoons fresh parsley, chopped
• Lemon slices, for garnish
Instructions
1️⃣ Pat the fish fillets dry with paper towels and season both sides with salt and black pepper. Lightly coat the fillets in flour.
2️⃣ Heat olive oil in a skillet over medium-high heat. Add the fish fillets and cook for 3-4 minutes on each side until golden and cooked through. Remove from skillet and set aside.
3️⃣ In the same skillet, melt butter over medium heat. Add garlic and cook for 1 minute until fragrant.
4️⃣ Pour in chicken broth and lemon juice, scraping up browned bits from the skillet. Simmer for 2-3 minutes to reduce.
5️⃣ Stir in lemon zest and parsley. Return the fish fillets to the skillet, spoon the sauce over the fish, and garnish with lemon slices.
6️⃣ Serve immediately with your choice of side dishes.
