Ingredients

For the Cake:

1½ cups all-purpose flour
1 teaspoon baking powder
½ teaspoon salt
1 cup unsalted butter, softened
1 cup granulated sugar
4 large eggs
2 tablespoons lemon zest (from about 2 lemons)
2 tablespoons fresh lemon juice
1 teaspoon pure vanilla extract

For the Lemon Glaze:

1 cup powdered sugar
2 tablespoons fresh lemon juice
1 tablespoon milk
Lemon slices and zest for garnish (optional)


Instructions

1️⃣ Preheat Oven and Prepare Pan:

Preheat your oven to 350°F (175°C).
Grease a 9×5-inch loaf pan and line it with parchment paper for easy removal.

2️⃣ Mix Dry Ingredients:

In a medium bowl, whisk together the all-purpose flour, baking powder, and salt. Set aside.

3️⃣ Cream Butter and Sugar:

In a large mixing bowl, beat the unsalted butter and granulated sugar using an electric mixer on medium speed until light and fluffy (about 2-3 minutes).

4️⃣ Add Eggs and Flavorings:

Add the eggs to the butter mixture one at a time, beating well after each addition.
Mix in the lemon zest, lemon juice, and vanilla extract until well combined.

5️⃣ Combine Dry and Wet Ingredients:

Gradually add the dry ingredient mixture to the wet ingredients, mixing until just combined. Be careful not to overmix.
