Description

Pineapple Heaven Cake is a light and moist cake infused with tropical pineapple flavor, topped with a sweet glaze. It’s the perfect dessert for any occasion.


Ingredients

• 1 1/2 cups all-purpose flour
• 1 teaspoon baking powder
• 1/2 teaspoon salt
• 1/2 cup unsalted butter, softened
• 1 cup granulated sugar
• 2 large eggs
• 1 teaspoon vanilla extract
• 1/2 cup sour cream
• 1 cup crushed pineapple, drained
• 1/2 cup powdered sugar
• 2 tablespoons pineapple juice


Instructions

1️⃣ Preheat the oven to 350°F (175°C). Grease and flour a loaf pan.
2️⃣ In a medium bowl, whisk together the flour, baking powder, and salt.
3️⃣ In a large bowl, beat the butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in vanilla extract.
4️⃣ Gradually add the flour mixture, alternating with sour cream. Begin and end with the flour mixture. Mix until just combined.
5️⃣ Fold in the crushed pineapple gently.
6️⃣ Pour the batter into the loaf pan and smooth the top.
7️⃣ Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
8️⃣ Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
9️⃣ In a small bowl, whisk the powdered sugar and pineapple juice to make the glaze. Drizzle over the cooled cake.
