Description

Peach Cake is a moist and flavorful loaf cake made with fresh peaches and topped with a sweet peach preserve drizzle, perfect for any occasion.


Ingredients

• 2 cups all-purpose flour
• 1 and 1/2 cups granulated sugar
• 1 cup unsalted butter, softened
• 4 large eggs
• 1/2 cup milk
• 2 teaspoons baking powder
• 1/2 teaspoon salt
• 1 teaspoon vanilla extract
• 2 cups fresh peaches, chopped
• 1/2 cup peach preserves


Instructions

1️⃣ Preheat the oven to 350°F (175°C). Grease and flour a loaf pan.
2️⃣ In a large bowl, cream together the butter and sugar until light and fluffy.
3️⃣ Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
4️⃣ In another bowl, whisk together the flour, baking powder, and salt.
5️⃣ Gradually add the flour mixture to the creamed mixture alternately with the milk, beginning and ending with the flour mixture. Fold in the chopped peaches.
6️⃣ Pour the batter into the prepared loaf pan. Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
7️⃣ Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
8️⃣ Drizzle the peach preserves over the cooled cake before serving.
