Description
A hearty and flavorful meal of golden, seared pork chops paired with creamy, cheesy scalloped potatoes.
Ingredients
• 4 boneless pork chops
• 4 cloves garlic, minced
• ½ cup grated Parmesan cheese
• 1 teaspoon dried thyme
• 1 teaspoon dried oregano
• ½ teaspoon salt
• ½ teaspoon black pepper
• 2 tablespoons olive oil
• 4 large potatoes, thinly sliced
• 2 cups shredded cheddar cheese
• 1 cup grated Parmesan cheese
• 2 tablespoons unsalted butter
• 2 tablespoons all-purpose flour
• 1 ½ cups milk
• 1 teaspoon garlic powder
• 1 teaspoon onion powder
• Salt and pepper, to taste
• 2 tablespoons chopped parsley (for garnish)
Instructions
1️⃣ Preheat the oven to 375°F (190°C).
2️⃣ Mix the garlic, Parmesan, thyme, oregano, salt, and pepper in a small bowl.
3️⃣ Rub the olive oil on the pork chops and coat them with the garlic-Parmesan mixture.
4️⃣ Sear the pork chops for 2-3 minutes per side, then transfer them to a baking dish.
5️⃣ Melt the butter in a saucepan, stir in the flour to make a roux, then slowly add the milk, whisking until thickened.
6️⃣ Stir in the garlic powder, onion powder, salt, and pepper, then add the cheeses and stir until melted.
7️⃣ Layer half of the sliced potatoes in a greased baking dish, pour half of the cheese sauce over, then repeat with the remaining potatoes and sauce.
8️⃣ Sprinkle the remaining Parmesan on top and bake for 40-45 minutes until golden.
9️⃣ After 20 minutes, add the pork chops to the oven and bake until cooked through.
