Ingredients

• 1 whole chicken (about 4 lbs)
• 2 cups all-purpose flour
• 1/2 teaspoon baking powder
• 1/2 teaspoon salt
• 2 tablespoons unsalted butter
• 1 cup whole milk
• Salt and pepper to taste


Instructions

1️⃣ Place the whole chicken in a large pot and cover it with water. Season with salt and pepper. Bring to a boil, reduce heat, and simmer for about 1 hour, or until the chicken is fully cooked and tender.
2️⃣ Remove the chicken from the pot, let it cool slightly, and shred the meat, discarding the skin and bones. Return the shredded chicken to the pot.
3️⃣ To make the dumplings, mix the flour, baking powder, and salt in a bowl. Cut in the butter until the mixture resembles crumbs. Gradually add the milk, stirring to form a dough. Roll out the dough on a floured surface and cut into small squares.
4️⃣ Bring the chicken broth back to a boil and drop the dumpling squares into the pot. Reduce heat to simmer, allowing the dumplings to cook for 15-20 minutes until tender and puffed.
5️⃣ Adjust seasoning with additional salt and pepper as needed, then serve hot with fresh parsley or thyme for garnish, if desired.
