Ingredients
• Ground beef (1 pound)
• Small onion, diced (1)
• Garlic, minced (2 cloves)
• Black beans, drained and rinsed (15 oz can)
• Corn, drained (15 oz can)
• Diced tomatoes with green chilies (10 oz can)
• Tomato sauce (8 oz can)
• Taco seasoning (1 packet)
• Shredded cheddar cheese (1 cup)
• Cornbread mix (1 package, plus ingredients on the package)
• Fresh cilantro, chopped (optional, ¼ cup)
Instructions
1️⃣ Preheat the oven to 400°F (200°C). Grease a 9×13-inch baking dish.
2️⃣ In a skillet, cook the ground beef over medium-high heat until browned. Drain excess fat.
3️⃣ Add diced onion and minced garlic to the skillet. Cook until softened, about 3 minutes.
4️⃣ Stir in black beans, corn, diced tomatoes, tomato sauce, and taco seasoning. Simmer for 5 minutes.
5️⃣ Transfer the beef mixture to the prepared baking dish. Sprinkle shredded cheddar cheese evenly on top.
6️⃣ Prepare the cornbread mix according to package instructions. Spread the batter over the beef mixture.
7️⃣ Bake in the preheated oven for 20–25 minutes, or until the cornbread is golden brown and cooked through.
8️⃣ Cool slightly before serving. Garnish with fresh cilantro, if desired.
