Ingredients

• 2 cups all-purpose flour
• 1 tsp baking soda
• 1/2 tsp salt
• 1 tsp cinnamon
• 1/4 tsp nutmeg
• 1 cup granulated sugar
• 1 cup brown sugar, packed
• 1 cup vegetable oil
• 3 large eggs
• 1 tsp vanilla extract
• 3 cups peeled and diced apples (e.g., Granny Smith)
• 1 cup chopped pecans

Caramel Glaze:
• 1/2 cup unsalted butter
• 1/2 cup brown sugar, packed
• 1/4 cup heavy cream
• 1/2 tsp vanilla extract
• Pinch of salt


Instructions

1️⃣ Preheat oven to 350°F (175°C) and grease a 9×13-inch or bundt pan with flour and butter.
2️⃣ In a bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg.
3️⃣ In a separate bowl, mix granulated sugar, brown sugar, and vegetable oil until smooth. Add eggs one at a time, then stir in vanilla extract.
4️⃣ Gradually mix dry ingredients into the wet mixture. Fold in diced apples and chopped pecans.
5️⃣ Pour batter into the prepared pan and bake for 50-55 minutes or until a toothpick comes out clean. Let the cake cool slightly.
6️⃣ For the caramel glaze, melt butter in a saucepan over medium heat. Stir in brown sugar and cream, bringing it to a gentle boil. Reduce heat, simmer for 2-3 minutes, then remove from heat and stir in vanilla and salt.
7️⃣ Pour the warm caramel glaze over the cake and let it set before serving.
