Description

A comforting dessert with juicy peaches and a golden, flaky biscuit topping. Perfect for any summer gathering or cozy family meal.


Ingredients

β€’ 3.5–4 lbs fresh peaches, peeled and cut into chunks
β€’ 1/4 cup light or dark brown sugar
β€’ 1 tablespoon cornstarch
β€’ 1 tablespoon lemon juice
β€’ 1 teaspoon vanilla extract
β€’ 1/2 teaspoon ground cinnamon
β€’ 1/8 teaspoon ground nutmeg
β€’ 1/8 teaspoon ground ginger
β€’ 1/8 teaspoon salt
β€’ 2 cups all-purpose flour
β€’ 1/2 cup granulated sugar
β€’ 1 and 1/2 teaspoons baking powder
β€’ 1/4 teaspoon baking soda
β€’ 1/2 teaspoon salt
β€’ 1/2 cup unsalted butter, cold and cubed
β€’ 1/2 cup buttermilk, cold
β€’ 1 egg (for egg wash)
β€’ 1 tablespoon milk or buttermilk
β€’ 2 tablespoons granulated sugar mixed with 1/2 teaspoon ground cinnamon (optional)


Instructions

1️⃣ Preheat the oven to 350Β°F (177Β°C) and grease a 9×13-inch baking pan.
2️⃣ In a large bowl, mix peaches, brown sugar, cornstarch, lemon juice, vanilla, cinnamon, nutmeg, ginger, and salt. Spread the mixture in the prepared pan and bake for 10 minutes.
3️⃣ In a separate bowl, whisk flour, sugar, baking powder, baking soda, and salt. Cut in the cold butter until crumbly. Add buttermilk and stir until combined.
4️⃣ Drop spoonfuls of dough onto the peach filling, spreading it out with your fingers.
5️⃣ Brush the biscuit dough with egg wash, and sprinkle with cinnamon-sugar if desired.
6️⃣ Bake for 40-50 minutes or until the topping is golden and the filling is bubbling.
7️⃣ Cool for 5 minutes before serving.

Serve warm with vanilla ice cream or whipped cream for a delicious treat!
